Victorian Tea-Time Scones

May 14, 2024-Today, we wanted to do something a little different. I have the pleasure of teaching a third grade student creative writing, and believe it or not, we’re reading Great Expectations by Charles Dickens! He’s quite a clever boy and it’s a dream come true to teach him each week and even more so when I can share one of my favorite books! Here’s a recipe that will take us back to the Victorian era with these classic scones. They’re a delicious taste of history, inspired by the time of Charles Dickens. These scones are simple yet scrumptious, perfect for enjoying with a cup of tea. With their soft texture and buttery flavor, these scones are a delightful treat for breakfast or an afternoon snack. They bring a touch of old-world charm to any gathering or to an afternoon spent reading the classics.

Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup unsalted butter, cold and cut into small pieces
  • 1/2 cup milk (plus extra for brushing)
  • 1 large egg
  • Optional: additional sugar for sprinkling on top

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. Add the cold, cubed butter to the dry ingredients. Use your fingertips or a pastry cutter to rub the butter into the flour mixture until it resembles coarse crumbs with some pea-sized pieces of butter remaining.
  4. In a separate small bowl, whisk together the milk and egg until well combined.
  5. Make a well in the center of the dry ingredients and pour the milk and egg mixture into the well.
  6. Use a fork or a spatula to gently stir the mixture until it just comes together into a soft dough. Be careful not to overmix.
  7. Turn the dough out onto a lightly floured surface and gently knead it a few times until it forms a cohesive ball.
  8. Pat the dough into a circle about 1 inch (2.5 cm) thick. Use a floured round cutter (about 2-3 inches in diameter) to cut out scones from the dough, re-rolling any scraps as needed.
  9. Place the scones onto the prepared baking sheet, leaving a little space between each one. Brush the tops of the scones with a little milk and sprinkle with sugar if desired.
  10. Bake the scones in the preheated oven for 12-15 minutes, or until they are lightly golden brown on top and cooked through.
  11. Remove the scones from the oven and transfer them to a wire rack to cool slightly.
  12. Serve the scones warm, split open and topped with clotted cream and jam, or enjoy them plain with a cup of tea.
